An Emulsifier is a substance that allows emulsion (mix) of two liquids that without can not be emulsified.  The Emulsifier works by stabilising the emulsion by increasing its kinetic stability.

Typically in offshore oil & gas, Emulsifiers are used as additives within drilling operations to aid the emulsion of different Drilling Fluids.
